Entre tradition et exp\u00e9rimentation, il \u00e9labore des vins expressifs qui refl\u00e8tent le terroir singulier de la r\u00e9gion.<\/p>\n<hr \/>\n<\/div>\n<div class=\"wine-section\">\n<h3><strong>Terroir<\/strong><\/h3>\n<p>Les vignes se trouvent \u00e0 500 m\u00e8tres d'altitude, face aux Pyr\u00e9n\u00e9es. Le Muscat pousse sur des coteaux caillouteux, pauvres et expos\u00e9s plein sud, tandis que le Sauvignon Blanc est cultiv\u00e9 sur des sols argilo-calcaires plus profonds. Cette diversit\u00e9 de terroirs contribue \u00e0 la complexit\u00e9 aromatique et \u00e0 la fra\u00eecheur du vin.<\/p>\n<hr \/>\n<\/div>\n<div class=\"wine-section\">\n<h3><strong>Vinification<\/strong><\/h3>\n<p>\u00ab Orange is the New Wine \u00bb est un vin blanc de mac\u00e9ration, \u00e9labor\u00e9 selon des techniques habituellement r\u00e9serv\u00e9es aux vins rouges. Les raisins mac\u00e8rent avec leurs peaux pendant 14 jours, puis sont press\u00e9s doucement pour en extraire le jus. La fermentation se termine dans des f\u00fbts ayant servi plusieurs mill\u00e9simes, o\u00f9 le vin est ensuite \u00e9lev\u00e9 pendant environ un an. Aucun sulfite n'est ajout\u00e9 pendant ce processus, afin de laisser s'exprimer le fruit et le terroir.<\/p>\n<hr \/>\n<\/div>\n<div class=\"wine-section\">\n<h3><strong>Notes de d\u00e9gustation<\/strong><\/h3>\n<p>Ce vin pr\u00e9sente de d\u00e9licats reflets orang\u00e9s et des ar\u00f4mes d'agrumes \u00e9clatants et expressifs. En bouche, il est l\u00e9g\u00e8rement tannique et bien structur\u00e9, avec beaucoup de fra\u00eecheur et une belle persistance aromatique.
