Manual harvesting into small crates, hand-sorting, traditional vinification with punching down of the cap in 5hl wooden barrels. After 45 to 60 days of fermentation and vatting time, the free-run wine is transferred directly into 225 and 500 liter French-oak barrels for aging near two years and before its bottling.

Why I like this wine
This wine comes from a specific geographic designations “Latour-de-France” in the Roussillon region, an interesting wine to find in the Taiwanese market: it has a high quality due to the maximum yield restriction imposed by the INAO (Institut national des appellations d’origine).
The wine shows dark garnet color with purple hue. We can perceive black plums, black berries and raisins aromas, followed by hints of spices such as cinnamon and black pepper. In the mouth the wine is rich and round, full-bodied style wine with intense but elegant tannins. Long finish with a good complexity.
