The harvest is sorted, destemmed, and crushed. The grapes are pneumatically pressed, placed in oak barrels for 2 wines, malolactic fermentation in barrels, aged for 12 months, blending of free-run wine, and press wine.
Without adding filtration and without added sulfates.

Why I like this wine
The color is dark garnet with purple reflections. The nose is expressive and complex (while remaining airy), on blackcurrant, menthol, obviously, but also smoky/stone notes. The palate shows a nice tension – we are on a 100% schist soil – The finish is also intense, spicy/mentholated, with a quintessential (tasty) blackcurrant. A very nice incarnation of Cabernet Franc, with class.
