-100% De-stemmed, then left for 7 days to macerate semi-carbonic.
-After pressing, the juice was run into barrels for alcoholic and malolactic fermentations.
-After 3 to 6 months in the barrels the wine was racked in tanks and buttled.
-Without filtration. No added sulfates.

Why I like this wine
The robe is dark purple, almost opaque. The nose is greedy, with black fruit coulis, pepper, and a little milky touch. The mouth is round, fresh, crunchy, as fruity as the nose, with a pulpy, slightly clinging matter, which gains in suppleness when the carbonic gas, quite present, is overcome. The finish reveals a greedy chew, tonic, with a bright fruit, and continues on peppery notes.
