在優秀的餐搭酒(Wine Pairing)中,食物與葡萄酒彼此的味道平衡為重要的關鍵。也因為如此,能夠巧妙地以法國葡萄酒搭配香料四溢的南洋風格料理則為難得的體驗。

同為愛酒人的Vavin團隊特別設計了與earnestos餐廳跨界合作的餐酒會。餐點將搭配來自法國釀酒家族「Collovray et Terrier」之酒款。「Collovray et Terrier」目前經營的酒莊分別有法國布根地的「Domaine Deux Roches en Bourgogne」以及南法隆格多克「Domaine Altugnac en Languedoc」。

因此此餐宴的特色除了難得的「亞洲南洋 x 法國葡萄酒」Pairing外;同時也可以品嚐同一個品種、同一個家族的釀酒經驗如何在兩個截然不同的地塊創造出各具美麗風味的葡萄酒。

晚宴當天將邀請家族酒莊經營人——Romain Bourgeois與Vavin台裔法籍總監——Claude Chen和各位嘉賓一同交流關於釀酒、品飲、餐搭酒的各種經驗。

In a well-curated wine pairing, the balance of flavors between food and wine is essential. Thus, pairing French wines with spice-rich Southeast Asian dishes makes for a rare and exciting experience.

As fellow wine enthusiasts, the Vavin team has specially designed a cross-collaborative dining event with Chef Ernest. The dishes will be paired with wines from the French winemaking family “Collovray et Terrier,” which operates both the “Domaine Deux Roches en Bourgogne” in Burgundy and the “Domaine Altugnac en Languedoc” in southern France.

This dinner not only highlights the unique “Southeast Asian x French Wine” pairing but also offers a chance to experience how the same grape variety and winemaking family can create beautifully distinct wines across two diverse terroirs.

On the evening of the dinner, we’ll be joined by Romain Bourgeois, winery representative of “Collovray et Terrier”, along with Claude Chen, director of Vaivin, to share insights and experiences in winemaking, tasting, and pairing with every guests.

2024甫開幕的earnestos,菜單中的「經典娘惹糕」、「富山灣瑩烏賊」、「草仔粿/巴拉醬」便榮獲2024年「臺灣500盤獎項」中的3盤。

以家的概念發想,earnestos 以木質桌椅、柔和的照明及香草花卉之點綴,打造出質樸優雅、同時充滿活力的空間。開放式廚房中,廚師們專注而敏捷地烹調,一舉一動都是一場表演。在這裡,時光似乎走慢了,每一位客人身處於放鬆愜意的氛圍中,享受美食與相互交流的樂趣,更認識了不同地區文化,卻置身家一般的舒適自在。

Opened in 2024, ‘earnestos’ was honored with three dishes in the “500 Dishes Award 2024” award selection.

Inspired by the warmth of a home, ‘earnestos’ creates an elegant and lively space with wooden furniture, soft lighting, and herbal floral accents. In the open kitchen, the team cooks with focused agility, turning each movement into a performance. Time seems to slow down here, allowing each guest to relax, savor the food, and enjoy friendly conversations. It’s a place to discover cultural flavors from different regions, all while feeling as comfortable as if at home.

來自新加坡的主廚 Ernest Toh,曾於法國米其林二星餐廳 Saint Pierre、米其林一星餐廳如新加坡的 Nouri 及位於哥本哈根的 Relæ,和獲米其林推薦的 Amass 等餐廳磨練技藝。隨後他來到台灣,先後於曾獲米其林餐盤推薦的 nku Firewood 以及曾獲米其林一星、亞洲 50 大餐廳的 MUME 擔任主廚。懷抱著對於食材的敬重與巧思,營養師出身的 Ernest,將遊歷歐洲習得的紮實技巧與亞洲風味的豐富性揉合,透過烹飪發揮食材風味、特性及營養價值,巧手打造出尊重食材自然風貌的菜餚。

Singaporean Chef Ernest Toh honed his skills at renowned establishments such as the two-Michelin-starred Saint Pierre in France, Singapore’s one-starred Nouri, Relæ in Copenhagen, and the Michelin-recommended Amass. He later moved to Taiwan, where he served as head chef at Michelin Plate-awarded nku Firewood and at MUME, which has earned one Michelin star and a spot in Asia’s 50 Best Restaurants. With a background in nutrition and a deep respect for ingredients, Ernest combines European techniques with Asian flavors, skillfully bringing out the natural qualities, flavors, and nutritional value of ingredients to create dishes that honor their essence.

成立於1986年的Collovray et Terrier象徵著兩個在釀酒方面有著深厚根基的家族合作。多年來,這個家族從布根地(Bourgogne)擴展到朗格多克(Languedoc)地區,並在擁抱新風土的同時,依然專注於品質與傳統的堅持。

Established in 1986, Collovray et Terrier represents the collaboration of two families with deep roots in winemaking. Over the years, the family expanded from Bourgogne to the Languedoc region, embracing a new terroir while maintaining the quality and tradition.

柯洛弗雷(Collovray)與泰瑞爾(Terrier)家族的釀酒歷史始於1928年。克里斯蒂安·柯洛弗雷(Christian Collovray)與尚-盧克·泰瑞爾(Jean-Luc Terrier)從小就是好友,並且共享對葡萄藤和葡萄酒的熱愛。他們與來自同一個葡萄酒釀造家庭的兩姐妹布莉吉特(Brigitte)和佛羅倫斯(Florence)結婚後,關係更加密切。1986年,他們實現了共同創建酒莊的夢想,使用克里斯蒂安及其父親的葡萄園開始釀酒。

該家族馬孔內(Mâconnais)葡萄園位於法國布根地南部,其地形多樣,從緩坡到石灰岩露頭,形成了不同的方位和微型風土條件。這片乾旱且多石的土壤,主要是由大約1.6億年前形成的卡洛維階(Callovian)石灰岩黏土組成,特別適合葡萄藤的生長。地理位置、坡度角度以及當地氣候,使得這片土地在降雨後能快速升溫並排乾,確保葡萄藤擁有恰到好處的水分。

夏多內(Chardonnay)在這裡表現尤為出色,並且該地區因被認為是這種葡萄的發源地而聞名。這種特別適應石灰岩土壤的葡萄,賦予了該地區葡萄酒卓越的口感和非凡的芳香精緻度。

馬孔內(Mâconnais)的風土有著悠久的歷史傳承,可追溯至公元3世紀的高盧-羅馬時期。如今葡萄園的組織形式更加現代化,受到AOC系統的影響,1936年普伊-富賽(Pouilly-Fuissé)獲得AOC地位,1971年聖維朗(Saint-Véran)也隨之獲得認證。

The Mâconnais vineyards in southern Burgundy are characterized by varied landscapes, ranging from gentle hills to limestone outcrops, creating diverse orientations and micro-terroirs. The arid, stony soils, primarily Callovian limestone clay formed 160 million years ago, are ideal for vine cultivation. The geographical features and climate allow the soils to warm and dry quickly after rain, providing optimal water conditions for the vines. 

Chardonnay thrives in this region, renowned as the likely birthplace of the grape, named after the village of Chardonnay. The limestone-rich soils enhance the wines’ aromatic finesse and distinctive palates.

The Mâconnais terroirs have a rich historical legacy, dating back to the 3rd century Gallo-Roman period. The current organization of the vineyards is more recent, shaped by the AOC system, with Pouilly-Fuissé gaining AOC status in 1936 and Saint-Véran in 1971.

新酒莊的誕生 】Domaine Altugnac en Languedoc

1997年,在布根地的Deux Roches誕生十年之後,Collovray et Terrier 家族來到了傳說中的卡達人之地,探索新的領域並接受新的挑戰。

他們同樣欣賞當地生產的白葡萄酒品質,尤其是出色的夏多內。在朗格多克的奧德上谷,這裡是種植夏多內和黑皮諾最多的地區(擁有石灰岩土壤、高海拔和涼爽的氣候)。

Altugnac酒莊位於朗格多克葡萄園的西南端奧德河谷的Limoux法定產區,佔地110公頃,靠近比里牛斯山脈。葡萄園海拔200至600公尺,享受地中海和大西洋氣候的影響,白天溫暖、夜晚涼爽,降水均衡,並受風力良好通風。主要種植的白葡萄有夏多內、莫扎克(Mauzac) 和蘇維儂;紅葡萄則有黑皮諾、梅洛、卡本內弗朗與希哈。

葡萄園地處Antugnac和Montazels之間,分為六個不同區域,每個區域的土壤和朝向各異,能增強葡萄品種的風味,並為調配提供更多選擇。在莊園附近,約300公尺高的地區,土壤為富含海洋化石的黏土-石灰岩,溫度較高,有助於紅葡萄品種提早成熟,使酒體更加圓潤。

Domaine Altugnac與Domaine Deux Roches在可持續實踐和尊重環境的釀酒理念上有相似之處。兩者都強調土壤健康、生物多樣性和謹慎的葡萄園管理,但在具體方法和項目上有所不同。Domaine Altugnac重視通過一致的釀造方法來展現其風土的多樣性,包括手工或機械收穫、限制投入和低硫使用。該酒莊還促進生物多樣性,自2019年以來維護蜜蜂群,產出芳香的花香蜂蜜。

In 1997, a decade after founding Deux Roches in Burgundy, the team arrived in the mythical land of the Cathars, seeking new challenges. The region’s landscapes and the quality of its white wines, particularly Chardonnay, drew them to the Haute Vallée de l’Aude in Languedoc. The area’s limestone soils, altitude, and climate offered conditions similar to Burgundy, reassuring them.

The Domaine Altugnac vineyards are located in Antugnac and Montazels, divided into six distinct areas with unique soils and exposures that bring out different grape characteristics, enhancing blending possibilities. Near the estate, at around 300 meters altitude, clay-limestone soils rich in marine fossils create warmer microclimates. These conditions help red grape varieties achieve early maturity, adding body and roundness.

Domaine Altugnac and Domaine Deux Roches share similar themes about sustainable practices and respect for the environment in winemaking. Both emphasize the importance of soil health, biodiversity, and careful vineyard management. However, they detail different methods and specific initiatives relevant to their respective regions and operations.

Domaine Altugnac emphasizes revealing the diversity of its terroirs through consistent vinification methods, including hand or machine harvesting, limited inputs, and low sulfite usage. The estate promotes biodiversity, integrating moors and woods into its landscape. Since 2019, they have maintained beehives, supported by beekeeper Michel Coillard, resulting in well-acclimated bees that produce aromatic honey with floral notes.
