Chef turned winemaker, **François Villard** has built a strong reputation for his expressive, precise wines from the northern Rhône Valley. The **Saint-Joseph “Poivre et Sol”** is one of his signature Syrah cuvées, reflecting the minerality of the granite soils and the spicy character (“poivre”) that this terroir naturally imparts to the grape.
Terroir
The vineyards are located on steep granite slopes within the **Saint-Joseph** appellation, with south and southeast exposures. These poor, stony soils combined with the Rhône Valley’s continental climate bring elegance, aromatic complexity, and tension to the Syrah, allowing the grape to fully express its peppery and floral notes.
Tasting Notes
Deep ruby color. The nose is intense and elegant, offering aromas of blackberry, blackcurrant, violet, and cracked black pepper, with subtle smoky and earthy undertones. On the palate, the wine is fresh and silky, with fine-grained tannins, bright acidity, and a long, spicy, mineral-driven finish.
