Domaine History
Aubert & Mathieu is a young and innovative wine project from Languedoc, created by two friends with a shared passion for crafting expressive, responsible wines. Their approach combines creativity, environmental consciousness, and the desire to reveal the full potential of Southern French terroirs.
Terroir
Originating from Corbières AOP, the vineyards are planted on limestone and clay soils under the Mediterranean climate. This environment provides the perfect balance of sun exposure and freshness, allowing full ripeness while preserving aromatic complexity and natural acidity.
Tasting Notes
Deep ruby red color. The nose is intense and seductive, with aromas of blackberries, cherries, and sweet spices. On the palate, the wine is rich and silky, offering fine tannins, generous fruit, and a long, elegant finish with notes of licorice and garrigue herbs.
A powerful yet refined Corbières red, blending southern warmth with balance and aromatic depth — perfect for sharing and enjoying now or after a few years of aging.
Pairing
Perfect with grilled lamb, beef stew, ratatouille, or hard cheeses like aged Comté.
