The Essence of Single Varietal Wines: A Pure Expression of Terroir and Craft
In many renowned wine regions, such as Burgundy and the Northern Rhône in France, single varietal wines represent a traditional winemaking approach. They are conventionally believed to best express the “terroir” of a region and the unique characteristics of a specific grape variety, serving as a pure embodiment of the winemaker’s interaction with nature.
Every bottle of single varietal wine acts as a faithful record keeper of the terroir where it grew. Terroir encompasses complex factors like climate, soil, topography, altitude, and local human influence. Without the interference of other grape varieties, single varietal wines can more clearly reflect the impact of these environmental elements on the grapes. The same grape variety, when grown in different regions and soil conditions, will exhibit distinctly different flavor profiles.
Crafting an outstanding single varietal wine is also a significant test of a winemaker’s skill. Since there are no other varieties to compensate for any shortcomings, the winemaker must precisely control every stage of the process, from vineyard to cellar, to maximize the grape’s potential. From cultivation and selecting the ideal harvest time to controlling fermentation temperatures and deciding on aging methods, each step embodies the winemaker’s deep understanding and ingenious craftsmanship of that particular variety.
Single varietal wines also offer greater educational and exploratory value. For those new to the world of wine, they are an excellent starting point for getting to know major grape varieties. For experienced tasters, they provide the best way to experience how different regions influence the flavor of the same variety.
For this exhibition, the Vavin team has specially selected six unique single varietal wines, inviting you to join us in a return to the pursuit of pure tasting experiences.
Wine Selection
Cabernet Franc: The Elegant Winemaking Pioneer
Cabernet Franc is an elegant red grape variety with excellent aging potential. Cabernet Franc truly shines in France’s Loire Valley and Bordeaux regions.
This varietal features smaller berries with thinner skins and ripens earlier than Cabernet Sauvignon. It best expresses its delicate aromatics and structure in cooler climates, though it still requires sufficient sunshine to achieve ideal ripeness.
Cabernet Franc wines offer a diverse range of styles, from fresh and elegant to complex and structured. In the Loire Valley, it’s often crafted into lighter-bodied wines with red berry and green bell pepper notes. This grape is renowned for its unique herbal and red fruit aromatics. Well-aged Cabernet Franc can also develop deeper aromas of baking spices, damp earth, and cigar box.
Its tannins are usually softer, with medium-high acidity and a medium body. The palate is fresh and lively, often concluding with a mineral finish, giving Cabernet Franc an elegant and poised character. It’s not as overtly powerful as Cabernet Sauvignon; rather, it’s more like a thoughtful poet, with strength subtly woven into its intricate details.

Malvasia Istriana: Istria’s Mediterranean Gem
Malvasia Istriana is a rare and captivating white grape variety hailing from the sun-drenched, sea-kissed Istrian Peninsula, a region straddling the border between Croatia and Italy. Here, it beautifully encapsulates a unique chapter in Mediterranean winemaking.
Deeply influenced by its local terroir, Malvasia Istriana perfectly reflects the essence of Istria. The warm climate, unique red soils, and the saline air from its proximity to the sea imbue this wine with bright, layered flavors. It’s incredibly versatile, performing exceptionally well as an aperitif, or paired with seafood, olive oil-infused dishes, and even the region’s classic black truffle specialties.
In Croatia, Malvasia Istriana is revered as a national treasure and stands as one of the cornerstones of local winemaking culture. It embodies tradition while also representing the contemporary Istrian wineries’ steadfast commitment to quality and their land. Increasingly, top-tier wineries are choosing to present Malvasia Istriana as a single varietal wine, allowing drinkers to truly appreciate the authentic character and enchanting allure of this remarkable grape.

Istrian Malvasia received its name from the largest peninsula in Croatia, where it is widely grown and known for. The wine enjoys an extensive maceration period of 5 days, hence its golden colour with a tint of orange hue. Loads of green apple, pear, apricot and mandarin on the nose joining with honey and orange blossom. Mouthfeel is round with good weight, it is mouthwatering with notes of sun-dried herbs and finishes with white flowers and green apple peel.
Merlot: Bordeaux’s Approachable Classic
Merlot, originating from the renowned Bordeaux region of France, owes its widespread appeal to its smooth texture and inviting character. This makes it a beloved classic for both red wine novices and seasoned connoisseurs alike.
The name “Merlot” comes from the French word “merle,” meaning “little blackbird,” a nod to its dark-skinned berries and a character that’s both subtly wild and inherently soft. Wines crafted from Merlot typically boast silky tannins, a rounded body, and delightful fruit flavors. Expect notes of ripe black cherry, blueberry, plum, and raspberry, sometimes complemented by hints of chocolate, vanilla, and spice on the finish. The flavors are full-bodied without being overly intense.
Another significant advantage of Merlot is its exceptional versatility with food pairings. Château Grand Baril, located in Montagne Saint-Émilion, is dedicated to organic farming, and their Gaïa cuvée is a testament to this philosophy. This organic Bordeaux is made from Merlot grapes grown on the region’s typical clay-limestone and sandy soils, which provide a balanced terroir that contributes to the wine’s aromatic complexity and elegant structure.
With a deep ruby red color, the wine’s nose opens with smoky, toasty notes of cherry and roasted coffee. On the palate, the wine is pleasant and well-balanced, offering a generous volume and a refined, aromatic persistence with a silky texture. This elegant wine is perfect for both aging and immediate enjoyment. It pairs excellently with grilled meats, lamb, duck breast, or hard cheeses like Comté.
Grenache: The Sun-Kissed Red
Grenache is a red grape variety imbued with the very essence of sunshine. Thriving in dry, warm climates, it’s particularly beloved in Spain and Southern France. The grapes themselves are typically large with thin skins, yet yield a lighter color and ripen relatively late. Naturally high in sugar, Grenache wines usually boast a higher alcohol content, while maintaining a comparatively lower acidity and softer tannins.
Its expressive, fruit-forward profile is the perfect ambassador for Mediterranean charm, reminiscent of sun-ripened red berries, infused with a touch of wildness and passion.
This varietal is renowned for its intense red fruit aromas, often featuring notes of strawberry, raspberry, ripe plum, and spices like white pepper, licorice, and cinnamon. Mature Grenache can also reveal deeper nuances of dried herbs, smoke, and leather. With soft tannins and medium acidity, the wine typically presents a medium to full body, offering a warm, generous, and incredibly approachable drinking experience.

Crafted from 100% Grenache grown on galets roulés and sandy-clay soils, this elegant Châteauneuf-du-Pape offers remarkable finesse and excellent aging potential.
Viognier: The Aromatic Expression of Elegance
Viognier grapes are small with thick skins and a late ripening period. This varietal is exceptionally sensitive to both terroir and winemaking techniques, requiring a warm, but not excessively hot, climate to fully ripen while retaining sufficient acidity. Viognier naturally has lower acidity and higher alcohol potential, demanding precise control from winemakers to prevent the wine from becoming overly heavy or unbalanced.
Wines made from Viognier typically present a full body and lower acidity, boasting captivating floral and fruit aromas. Characteristic flavors include apricot, peach, ripe pear, tropical fruits, and orange blossom. Some expressions may also carry hints of honey or spice. When aged in oak, Viognier gains a beautiful creamy and vanilla-like texture.

François Villard’s “Les Contours de Deponcins” is an elegant and expressive Viognier from the Rhône hillsides, just outside the Condrieu appellation. Pale gold in color, it opens with inviting aromas of apricot, white peach, honeysuckle, and a touch of almond. The palate is rich yet finely balanced, showcasing a silky texture, ripe stone fruit, and a fresh, mineral-driven finish. Grown on granite-rich soils, this Viognier combines aromatic intensity with purity and finesse. It reflects Villard’s culinary roots, emphasizing precision and layered complexity. A graceful and food-friendly wine, ideal with grilled seafood, creamy poultry, Thai cuisine, or soft cheeses.
Pinot Gris: A White Wine of Many Faces
Pinot Gris is a wonderfully versatile white grape variety. It originated in Burgundy, France, before finding its true renown in the Alsace region. This adaptable grape has thin-skinned berries, ripens at a moderate pace, and can express a remarkable range of styles depending on its terroir.
The chameleon-like nature of Pinot Gris allows for a diverse spectrum of wines, heavily influenced by its growing region and winemaking techniques. Typical flavors often include pear, apple, honeydew melon, and citrus fruits, sometimes complemented by hints of ginger, spice, or honey. Wines from Alsace, for example, tend to be fuller-bodied, often with a touch of sweetness and intriguing complexity.
Like a skilled actor, Pinot Gris can transform its personality based on the terroir and the winemaker’s touch. Whether it’s presented as elegantly full-bodied or refreshingly crisp, Pinot Gris consistently charms with its finesse and approachability, making it an effortless addition to various occasions and culinary pairings.
