Domaine Jean-Marc Boillot, based in Pommard, stands among Burgundy’s respected family estates, renowned for crafting precise and elegant wines. Jean-Marc Boillot, coming from a lineage of famous winemakers (Boillot and Sauzet families) and a former winemaker at Olivier Leflaive, founded his own estate in 1985. His philosophy focuses on expressing the personality of each terroir with meticulous vineyard care and balanced winemaking.

風土條件

Volnay 1er Cru “Le Ronceret” is located at the southern end of Volnay’s premier cru zone, on fine clay-limestone soils with excellent drainage. Known for producing some of the appellation’s most delicate and aromatic wines, this terroir provides elegance, floral notes, and silky tannins — a true reflection of Volnay’s finesse.

品飲筆記

Brilliant ruby color. The nose is expressive and refined, with aromas of red cherries, wild strawberries, violets, and subtle spice. On the palate, the wine is elegant and silky, offering fine tannins, bright acidity, and a long, floral, and mineral-infused finish.

釀造與陳年

Manual harvest with strict grape selection. Traditional vinification with gentle extraction to preserve the finesse of the fruit. Aged in French oak barrels, with approximately 25-30% new oak, for 12 to 18 months, ensuring complexity without overpowering the elegance of the Pinot Noir.

Perfect with roast chicken, duck breast, veal cutlets, or mushroom risotto. Also pairs well with soft cheeses like Brie, Reblochon, or Tomme de Savoie.
