Domaine History
Domaine Jean-Marc Boillot, based in Pommard, is a family estate renowned for its precise, terroir-driven Burgundy wines. A descendant of the Boillot and Sauzet families and former winemaker at Olivier Leflaive, Jean-Marc Boillot established his own domaine in 1985. Today, the estate is known for its meticulous vineyard work and commitment to traditional Burgundian techniques, producing elegant and expressive Pinot Noir from prestigious appellations.
Terroir
The Volnay 1er Cru “Les Pitures” vineyard lies just below the famous Clos des Ducs, on well-drained clay-limestone soils. The terroir benefits from excellent sun exposure, bringing finesse, purity, and aromatic complexity to the Pinot Noir grapes, while maintaining the hallmark elegance of Volnay.
Tasting Notes
Brilliant ruby color. The nose is refined and aromatic, with notes of red cherries, wild strawberries, rose petals, and hints of spice. On the palate, the wine is silky and vibrant, offering fine-grained tannins, bright acidity, and a long, delicate finish with floral and mineral nuances.
A graceful and elegant Volnay Premier Cru, showcasing purity of fruit, silky texture, and the finesse of the “Les Pitures” terroir — a beautiful example of Jean-Marc Boillot’s style.
Vinification & Aging
Hand-harvested grapes with strict sorting. Traditional vinification with gentle extraction to preserve elegance and freshness. Aged in French oak barrels, with a balanced proportion of new oak (about 25-30%), for 12 to 18 months to enhance complexity without overpowering the fruit.
Pairing
Perfect with roast poultry, veal, duck breast, or mushroom-based dishes. Also pairs beautifully with soft cheeses like Brie or Reblochon.
