Maison de Montille, an extension of the historic Domaine de Montille, is renowned for its commitment to organic and biodynamic viticulture and its precise, terroir-driven Burgundian wines. Under the leadership of Étienne de Montille, the estate upholds a philosophy of minimal intervention, highlighting the purity and elegance of each parcel. The “Pomone” cuvée, named after the Roman goddess of fruit, reflects the estate’s respect for nature and tradition.
Terroir
The grapes for this Pommard 1er Cru are sourced from carefully selected parcels with clay-limestone soils on the slopes of Pommard. This terroir, combined with low yields and sustainable vineyard practices, delivers concentration, structure, and vibrant minerality to the Pinot Noir grapes.
Note di degustazione
Deep ruby color with garnet reflections. The nose is complex and elegant, featuring aromas of red cherry, raspberry, rose petals, and earthy notes with a subtle hint of spice. On the palate, the wine is structured and refined, with firm yet silky tannins, fresh acidity, and a long, mineral-driven finish.

Vinificazione e Affinamento
Hand-harvested grapes, traditional vinification with native yeasts, partial whole-cluster fermentation, and aging in French oak barrels (with a moderate proportion of new oak). Minimal intervention to respect the purity of fruit and terroir.
Abbinamento
Excellent with duck breast, veal chops, mushroom-based dishes, or aged cheeses such as Comté or Gruyère.
