Rain changes the pace of an evening. We stay in, order something comforting or give a simple dinner a little more time. The bottle should follow the food and the mood—but it does not automatically need to be a powerful red.

That distinction matters in Taiwan. A rainy day may still be warm and humid, and a wine left on the table can warm quickly. Sparkling and white wines should stay properly chilled, while most reds are better served slightly cooler than the room.

1. Begin with freshness

When the rain starts before dinner, sparkling wine is a natural first bottle. Its acidity and bubbles refresh the palate, especially alongside salty or fried snacks, charcuterie, seafood or a light starter.

It brings citrus, green apple and light brioche notes, with a fine mousse and a crisp finish. Serve it well chilled, then let it open gradually in the glass.

2. With spicy food, choose a little sweetness

Chilli heat can make alcohol feel stronger and tannins more severe. A wine with a touch of sweetness can soften that sensation, while freshness keeps the pairing lively. This is why off-dry Riesling, Gewürztraminer and demi-sec sparkling wines are so useful with spicy dishes.

It combines raspberry, white peach and honeyed notes with a rounded texture and a fresh finish. Try it well chilled with spicy fried chicken, dishes seasoned with chilli or a rich takeaway meal.

3. For mushrooms or roast chicken, lightly chill the Pinot Noir

Earthy dishes call for a wine with fragrance and freshness rather than sheer weight. Mushrooms, roast chicken and duck all work naturally with Pinot Noir, especially when the wine has bright red fruit, lively acidity and fine tannins.

It shows red berries, cherry and subtle earthy notes with a smooth, silky texture. In Taiwan, begin around 13–15°C and allow the wine to warm slowly in the glass.

4. With a slow-cooked dinner, move to Syrah

For lamb, duck, braised meat or a mushroom-rich dish, a fresh Northern Rhône Syrah brings more structure without becoming heavy. Pepper, dark fruit and floral notes give depth to the meal, while freshness keeps the finish precise.

It offers blackberry, blueberry, violet and pepper aromas with fine tannins and a mineral finish. Serve it slightly cool, around 15–17°C.

5. End with chocolate and Port
