Estate Overview

Located in the heart of the prestigious **Sauternes** appellation in Bordeaux, **Clos Dady** specializes in crafting refined sweet wines. The estate follows traditional methods to produce elegant, well-balanced Sauternes, focusing on harvesting fully botrytized grapes to achieve richness, aromatic intensity, and freshness.

Terroir

The vineyards benefit from the unique microclimate created by the confluence of the **Garonne** and **Ciron** rivers, promoting the morning mists essential for the development of **Botrytis cinerea** (noble rot). The soils are composed of **gravel, clay, and limestone**, offering excellent drainage and contributing to the concentration and complexity of the wines.

Winemaking

Grapes are **hand-harvested in several selective passes**, ensuring only the best botrytized berries are picked. Fermentation takes place in temperature-controlled stainless steel vats and French oak barrels. The wine is aged for several months in barrels, enhancing its texture, aromatic complexity, and aging potential while preserving vibrant fruit flavors.

Tasting Notes

Beautiful golden yellow color with amber highlights. The nose reveals rich aromas of **honey, apricot, candied orange peel**, and **white flowers**, followed by subtle notes of **vanilla and toasted almonds**. On the palate, the wine is **smooth, luscious, and well-balanced**, with bright acidity that lifts the sweetness and leads to a long, elegant finish. The **2015 vintage** offers generosity, freshness, and aromatic purity.

A classic and elegant Sauternes—rich, fresh, and beautifully balanced, with expressive botrytized fruit and refined sweetness.

Pairing

Perfect with foie gras, blue cheese, fruit-based desserts, or as an aperitif.
