Domaine History
**Château du Cèdre**, located in **Cahors**, southwest France, is a benchmark estate renowned for its commitment to organic viticulture and expressive wines. Managed by the Verhaeghe family, the domaine has expanded its expertise beyond red wines to craft exceptional whites. **Le Cèdre Blanc** is a testament to this evolution, showcasing the estate’s dedication to purity, balance, and terroir-driven expression.
Terroir
The Viognier vines are planted on the **2nd and 3rd terraces** and the **limestone plateau** of the Lot Valley. These soils, rich in limestone scree, provide excellent drainage and contribute to the wine’s mineral backbone. The region’s temperate climate, with warm days and cool nights, allows for optimal ripening while preserving acidity and aromatic complexity.
Winemaking
Grapes are **hand-harvested** and carefully sorted. A **24-hour skin maceration** precedes gentle pressing. Fermentation occurs at controlled temperatures, with **20% in new 500L oak barrels** and **80% in stainless steel tanks**, maintaining varietal purity and enhancing texture. The wine is aged on fine lees for **8 months**, adding depth and complexity. Minimal sulfites are used, and the wine is bottled unfiltered to preserve its natural character.
Tasting Notes
Brilliant yellow hue. The nose is **intense and expressive**, revealing aromas of **white fruits**, **violet**, **white peach**, and **apricot**. On the palate, the wine is **elegant and balanced**, with a **powerful and long** finish. The texture is silky, and the flavors are persistent, highlighting the purity of Viognier and the finesse of the terroir.
