Domaine History
Domaine Altugnac is located in Antugnac, in the Upper Aude Valley of Languedoc, overlooking the Pyrenees. Its vineyards are planted at elevations between 350 and 500 metres, where Mediterranean and mountain influences shape the estate’s wines.
Terroir
The Chardonnay vines used for **Les Grands Penchants** were planted between 1972 and 2000 at around 400 metres above sea level, on south to south-easterly slopes facing the Pyrenees. The clay-limestone subsoil is covered by black soils rich in schist and gravel. Strong day-to-night temperature variations favour slow, extended ripening.
Winemaking
The grapes are loaded gently into the press by gravity and pressed slowly. The must is clarified at low temperature. Alcoholic and malolactic fermentations take place in stainless-steel tanks, wooden vats and barrels. The wine then matures on fine lees until spring.
Tasting Notes
Golden and generous in appearance, the wine offers aromas of pollen and mirabelle plum. The palate is broad and richly flavoured, with notes of yellow fruits including peach and mirabelle.
A generous high-altitude Chardonnay with ripe yellow-fruit flavours and a broad, expressive texture.
Pairing
Enjoy on its own as an aperitif or with vegetable risotto, spinach and hazelnut crumble, or chicken and lemon tagine.
