Domaine History

Aubert & Mathieu is a modern, eco-conscious wine project founded in the Languedoc region by two childhood friends, Jean-Charles Aubert and Anthony Mathieu. Their philosophy is to craft expressive, sustainable wines with a strong sense of place, combining minimal intervention with a contemporary vision of winemaking.

Terroir

“Hautes Pistes” comes from high-altitude vineyards in the Pyrenean foothills of the Languedoc. The altitude and cooler climate bring freshness and balance, while the schist and clay soils contribute minerality and depth to the Syrah grapes.

Tasting Notes

Bright ruby color with youthful purple edges. The nose bursts with playful aromas of strawberry candy, raspberry, and bubblegum, typical of carbonic maceration, layered with hints of fresh violets and subtle spice. On the palate, the wine is light to medium-bodied, juicy, and fruit-forward, with silky tannins and a refreshing, lively finish.

An energetic and fragrant Syrah made with carbonic maceration, offering irresistible fruitiness and immediate drinking pleasure.
