Domaine History
Lionel Osmin & Cie is a passionate ambassador of Southwest France’s diverse terroirs. The Clos Cancaillau vineyard, situated in the Jurançon appellation, is renowned for its meticulous vineyard management and sustainable practices, resulting in expressive, terroir-driven wines.
Terroir
The grapes for “Le Dernier Carré” are sourced from the final parcel harvested in the Clos de la Vierge, characterized by rolled pebbles and amphitheater-like, south-facing terraces. The vineyard’s unique microclimate, influenced by the Foehn effect, allows for late harvesting of healthy grapes without botrytis, enhancing concentration and aromatic complexity.
Winemaking
Harvested in early November, the grapes undergo gentle pneumatic pressing, followed by fermentation at controlled temperatures. The wine is aged on fine lees, partially in barrels, for 18 months, preserving its aromatic intensity and freshness.
Tasting Notes
Brilliant golden hue. The nose reveals expressive aromas of exotic fruits like fresh pineapple and mango, complemented by notes of white truffle and a hint of vanilla. On the palate, it offers a harmonious balance between sweetness and acidity, leading to a fresh, elegant, and lingering finish.
A vibrant and refined sweet wine, showcasing the exotic fruit character and freshness typical of Jurançon.
Pairing
Perfect with foie gras, roasted chicken with pineapple, spicy curries, a variety of cheeses, fruit-based desserts, or as an aperitif.
