About the Cheese

Created around 1890 and later named for the French gastronome Jean Anthelme Brillat-Savarin, this cheese is enriched with cream and develops a natural bloomy rind.

Tasting Profile

Rich and silky, almost like dense clotted cream, with fresh cream, butter, mushroom and delicate lactic acidity.

Serving & Pairing

Serve slightly tempered as part of a cheese course or with wine.
