Domaine History

The Grossot family estate was established in the 1920s and first bottled its own Chablis in 1980. Corinne and Jean-Pierre Grossot work with their daughter Eve at the family domaine in Fleys.

Terroir

The 1.45-hectare Vaucoupin parcel lies on steep, full-south-facing slopes at Chichée. Its predominantly Kimmeridgian clay soil includes chalk, and the vines average about 40 years of age.

Winemaking

The 2019 grapes were pressed immediately in a pneumatic press without skin contact. Fermentation took place in temperature-controlled stainless-steel tanks at 19–22°C, followed by six months on fine lees with malolactic fermentation. The wine was gently filtered and bottled after 16 months of élevage.

Tasting Notes

Lemon balm, bright citrus and pear lead to an expressive, mouthfilling palate. Saline notes and precise acidity carry the energetic finish.

An exact-2019 Vaucoupin combining expressive fruit, saline definition and precise acidity.

Pairing

Serve with oysters, fish in sauce, poultry, veal, snails, or fresh and mature goat cheese.
