Domaine History

Aubert & Mathieu is a young, dynamic winery from Languedoc, founded by two friends passionate about crafting expressive wines with a strong identity. Their approach focuses on low-intervention winemaking, sustainable practices, and showcasing the best terroirs of southern France.


Terroir

Grown on the sun-drenched hillsides of the Minervois appellation, the vineyards are planted on limestone and clay soils. This terroir provides excellent drainage and contributes to the aromatic richness, balance, and structure of the wine.


Tasting Notes

Deep ruby color with purple highlights. The nose reveals intense aromas of blackberries, ripe plums, garrigue herbs, and a touch of pepper. On the palate, the wine is generous and smooth, with velvety tannins and a long, spicy finish.

A powerful yet elegant Minervois red, combining ripe fruit, silky texture, and Mediterranean spice.

Perfect with grilled meats, lamb stew, ratatouille, or aged cheeses.
